Instructions
- Prepare the cheese mixture. In a mixing bowl, combine 15 ounces of ricotta cheese, 24 ounces of lowfat cottage cheese, 2 eggs, 1/2 cup of shredded mozzarella, 1 tablespoon of parsley flakes, and salt and pepper to taste. Mix everything together well.
- Cook the meat sauce. In a pan, brown 1 pound of ground beef and 1 pound of ground Italian sausage. Drain the excess grease or soak it up with a paper towel. Add 3 to 4 minced garlic cloves, 1 teaspoon of Italian seasoning, and salt and pepper to taste. Pour in two 24-ounce jars of your favorite marinara sauce, stir, and let it simmer for a few minutes.
- Assemble the lasagna. Spray the bottom of your lasagna pan with olive oil. Spread a thin layer of the meat sauce on the bottom. Place a layer of oven-ready lasagna noodles on top, breaking pieces to fit if necessary. Spread a layer of the cheese mixture over the noodles, then add another layer of meat sauce. Repeat these layers until you have used all your ingredients, finishing with a thick layer of mozzarella cheese, 1 1/2 cups of parmesan cheese, and a sprinkle of parsley.
- Bake the lasagna. Cover the pan with aluminum foil. Bake at 350 degrees Fahrenheit for 1 hour. Remove the foil and bake for another 10 to 15 minutes until the cheese is melted and bubbly.
