Shrimp Pad Thai

This shrimp Pad Thai is made by stir-frying noodles, shrimp, and eggs on a griddle with a savory sauce, ready in about 25 minutes.

Let’s make shrimp pad thai. You can use any kind of protein, and you do not have to do it on a blackstone, you can do it on a skillet.

Shrimp Pad Thai

Serves: 4 people

Ingredients

  • For the Noodles
  • 6 oz stir-fry rice noodles
  • For the Protein and Vegetables
  • 1 lb large shrimp, peeled, deveined, tail off
  • 2 eggs, beaten
  • 1 cup bean sprouts
  • green onions, cut into 2-inch pieces
  • 2 garlic cloves
  • avocado oil
  • For the Sauce
  • 3 tbsp soy sauce
  • 2 tbsp fish sauce
  • 1 tbsp oyster sauce
  • 1 tbsp lime juice
  • 1 tbsp rice vinegar
  • 2 tbsp brown sugar
  • ¼ tsp white pepper
  • 2 tsp cornstarch
  • For the Garnish
  • cucumber, sliced
  • bean sprouts
  • cilantro
  • green onions, sliced
  • crushed peanuts

Instructions

  1. Prepare the noodles. Cook the rice noodles according to the instructions on the box. Once they are done, rinse them with cold water to remove the starch and stop the cooking process. Then, rinse them with warm water so they do not stick as much.
  2. Make the sauce. In a small bowl, combine the soy sauce, fish sauce, oyster sauce, lime juice, rice vinegar, brown sugar, white pepper, and cornstarch. Give it a really good mix, as the cornstarch tends to sink to the bottom. If you use tamarind paste, you only need 2 tablespoons and can skip the lime juice, rice vinegar, and brown sugar.
  3. Cook the shrimp and eggs. Add some avocado oil to your hot griddle. Add the shrimp and the beaten eggs to the griddle. Do not overcook the shrimp because you do not want them rubbery. Once the eggs are done and the shrimp are almost cooked, mix them together.
  4. Stir-fry the vegetables. Add the bean sprouts, green onions, and garlic to the shrimp and eggs. Give everything a good stir-fry.
  5. Combine and finish. Add the cooked noodles to the griddle. Pour the sauce over the noodles and give it a good stir-fry. Be careful with the noodles so they do not break up.

Nay’s Tips:

  • Be careful with limes in the summer because there is such a thing as lime burn.
  • If you have limes, you can cut some and add them to the plate.
  • You can use any kind of protein.
  • You can use a skillet instead of a blackstone griddle.
  • You can use tamarind paste instead of the lime juice, rice vinegar, and brown sugar combination.

Yes, you can use any kind of protein you like for this dish.

Do I have to use a Blackstone griddle?

Not at all, you can easily use a skillet instead of a griddle.

Can I substitute the lime juice and sugar in the sauce?

If you have tamarind paste, you can use 2 tablespoons of it and skip the lime juice, rice vinegar, and brown sugar entirely.

Store any leftovers in an airtight container in the refrigerator for up to 3 days.

What is the best way to reheat this?

You can reheat leftovers in a skillet over medium heat with a splash of water or oil to keep the noodles from drying out.
